 This internship offers students the opportunity to work with Jenna Leurquin, a french trained pastry chef. Jenna intends to accompany the interns through their learning curves and teach them a broad variety of skills from laminating dough, baking, confectioning various fillings and ice cream, etc. Furthermore, the students will learn the importance of organisation, cleanliness and efficiency. From time management to inventory and ordering, students will learn all aspects of managing a proper pastry production.

Duties and Responsibilities: 

- Supporting various stages of baking process.
- Scaling and preparing raw materials.
- Piping macarons, ganaches and chantilly cream with consistency.
- Preparing ganaches, chantilly cream, caramel, fillings and Ice cream.
- Operate commercial mixers and ice cream machine.
- Operating dough sheeter to laminate pie dough and various crusts.
- Shaping dough into pie shells.
- Manage the baking of various items such as pies, cakes, and macaron.
- Assembling all of the elements into one finished product.
- Glaze and decorate finish products.
- Maintaining a clean and organized work space.
- Working efficiently and cooperatively with other staff members.
- Fulfill prep tasks as needed such as unloading merchandise, cutting butter, refilling flour bins, etc.

Minimum Requirements: 
  • Current EMCC student¬†
  • Min. of a 2.5 GPA
  • Minimum pastry skills and pastry specific task comprehension.
  • Strong attention to details.
  • Must have the physical abilities to carry out the functions of the job description.
  • Reliability to arrive to shifts on time.
  • Current food handlers card.
  • Maintain cleanliness of the uniform, personal hygiene and work station.
  • Cooperate and collaborate with the rest of the kitchen staff to ensure all tasks are complete on time.
